Just some special thoughts about the sender of these receipe's. She is not a Noble family member but she is a dear friend of mine that I practically grew up with. Her mother and mine were best friends. We lost touch with each other and she took the time to find me and rekindle that frienship. For that , I say "Thank You ,Jeanette".

Cabbage Rolls with potatoes

Preheat oven to 375 degrees (if using baking dish)
If you make these in a pressure cooker, cook for 20 minutes.

    Ingredients:

  • 1 lb. of lean ground beef
  • 1 C. cooked (measured rice before cooking) rice
  • 1 can diced tomatoes
  • Salt and Pepper to individual taste
  • 1 Large head of cabbage
  • 1 can Campbell's Tomato Soup
Prepare cabbage by separating leaves. If they are tight , run hot water gently over leaves so that they separate without tearing.Afterwards par boil in a large pot of boiling water. To help with the cooking , pare down the main stem (it will be thick) so that it is flat and easy to fold.
Mix the ground beef , rice, tomatoes, salt, and pepper in a large bowl. Take one leaf of cabbage placing in the hand you don't normally use, with the main stem towards your wrist.
Take a large serving spoon, place one spoonfull on cabbage leaf. Fold bottom up, sides in, and top down. It should end up looking like a small package. I use a pressure cooker, but you can also make these in the oven. Put rack in pot, and start laying in cabbage rolls. Place potatoes next cabbage rolls, alternating them. When one row is done, move up to the next. Placing the cabbage rolls over the potatoes. When you are finished, cover with 1 1/2 cups water, and whole can of Tomato Soup.
    Take out and serve
